CBD Pear Salad with Dried Cherries and Candied Walnuts:

(This recipe was adapted from Minimalist Baker)

Although the holidays are usually a time to indulge food-wise, it’s always a good idea to have a healthy side salad that people can eat to help balance out their meal. Get your guests’ mouths watering with this decadent pear salad with dried cherries and candied walnuts. You may want to print this one out, because we already know your Great Aunt Jeanine is going to want to keep this one for her records.

Ingredients (yields 6 servings):

For the Salad:

  • 2 6oz bags of mixed greens
  • 2 ripe Bartlett Pears, thinly sliced lengthwise
  • ½ cup dried cherries
  • 2 cup candied walnuts

For the Dressing:

  • 6 scoops of Barista Blend
  • ½ cup balsamic vinegar
  • ½ cup extra virgin olive oil
  • 1 medium shallot, minced
  • 1 pinch sea salt and black pepper

Recipe:

  1. Add all dressing ingredients to a jar and shake vigorously to combine. Set aside.
  2. Add greens, one of the sliced pears, dried cherries, and half of the walnuts into a large mixing bowl. Drizzle with a bit of dressing and toss to combine.
  3. Plant and garnish with remaining pears and walnuts, and share with remaining dressing. Enjoy!

Plant-Based Gravy:

(This recipe was adapted from Shane and Simple)

Get that mashed potato boat ready, because you’re gonna wanna pour this gravy all up in it. If we could drink it straight from the bowl we would, but we didn’t think that would be appropriate to do in front of our relatives. Don’t be mad if there aren’t any leftovers.

Ingredients (Yields 8 servings):

  • 8 scoops of Barista Blend
  • ¼ cup & 1 tbsp whole wheat flour
  • ¼ cup nutritional yeast
  • 1 ½ tsp onion powder
  • 1 tsp. garlic powder
  • ¼ tsp rosemary
  • ⅛ tsp thyme
  • 2 cups low sodium vegetable broth
  • 2 tbsp soy sauce
  • Salt to taste

Recipe:

  1. Preheat medium sized saucepan on medium-high heat. Add all dry ingredients except Barista Blend to saucepan and whisk for 30 seconds.
  2. Whisk in the veggie broth and soy sauce until all ingredients are well combined.
  3. Lower heat to medium and bring to a boil. Reduce the heat one more time to low, let simmer, and whisk to thicken.
  4. Remove gravy from heat once it reaches your desired consistency. Add in Barista Blend, stir, and serve!
